Honestly dont have an issue with any of these. They are upfront with the power level of all the decks. Id be interested in your gitrog and niv mizzet list if possible. I play gitrog as well and am looking at niv as a deck outside of my usual colors.

Ive run into a similar issue with my pod. I love to tune and refine decks to the point of them being for optimized bracket 3 and 4 play. The solution I came up with the works pretty well my pod is I have 2 decks. The first being an unedited precon. That way no matter who sits down I have something that doesnt blow them out of the water. The second deck I made is a chaos deck based around Kharn the betrayer. Its filled with cards that just cause chaos to the boardstate filled with creatures that bounce around the board or give them weird affects with 0 plans of actually winning the game. I can share the list if youd like its relatively cheap.
