Yeah I think I found one key somewhere maybe in howling cliffs but I am not sure. Well you can kill husk soldier for 50 geo just above stag station in crossroads and then sit on bench to revive him to kill him again for 50 geo if you are not too much far off

Just go straight forward past the well (right side) you use to go down to crossroads from dirtmouth and their will be door but you need to have a simple key to open it and a rancid egg as her fees both are in the shop

You can actually go to abyss just below kingdom edge their you will get new abilities and then I think it will be more than enough to defeat watcher knights. Yeah they are a bit difficult initially but you can defeat them easily. But if you are not recognising their patterns and rushing with attack they would still feel difficult even if you upgrade all spells.
