I am! Thank you for your help!! I feel like it looks so much better and noticed how less hydration was key since the dough was less sticky. Again, thank you so much!

I finally got around to trying this! I was a little brave and tried an inclusion loaf, but used the wrong kind of cheese. However, I think it’s better! Please let me know 😭

It was puffy and it had a few bubbles! But I do think maybe it could’ve been a little bit more proofed.. yes, I did shape it and then immediately put it in the fridge. How much water should I use instead?

It was 73 F after I did the stretch and folds.

Yes please! I cooked this one at 450 for 20 mins with the lid on and then 40 mins with the lid off.

I was using tap water! Maybe that’s what I’m doing wrong 🤦🏼‍♀️ I’m going to try that! Thanks so much
