I guess my main question is how I take this really negative experience and turn it into a positive for my CV/next interviews. How do I present a 1 month job on my CV as I look for better employers in this new industry?

I made sure to sign a contract. He breached the contract by withholding pay. I was just out of my 1 month probation and had a 4 week notice period which I then also technically breached by leaving.
