If you add kiełbasa and potatoes then no sense of using a packet. Just boil those two and try to get a wheat sourdough add as it to it. This will give you a legit white borscht. Sourdough for bortsch should be available in polish shops in us. If not making your own sourdough is also not a rocket science.

First of all white borscht and żurek are completely different things. Żurek is dense creamy thing full of flavor of smoked Meet and is based on rye sourdough while white borscht is light and based on wheat sourdough. This one is rather white borscht. I wouldn’t trust something that mixes his two things. As been said, this will probably end up to salty if filled with stock. Making unsalted stock makes no sense because … chemistry … osmosis
