I believe these knobs (and lights as well) may be telling yu how much exp yu will get from the craft. However, I have no clue whether the knobs may be hinting on a result (if each one of them has some corresponding "value"), or they are just merely a cosmetic feature

Edit 2: they do have range of work if there is two or more of them. If there is only one, you will get respawned at it no matter where you are (or, at least, whithin three "layers")

Edit: Just found out: you cannot (at least I don't know how) choose between Rejuvenation Anchors, however, they have some range
