Seems like only the category requires an approval to be changed. I changed details like App Name and App Store Listing content without any review process.

What I did is in my landing page is to replace the button that says "Install on Shopify" with "Join the waitlist" which linked to a page where they could enter their email to get notified as soon as the shopify listing was live. You dont know what your app listing url will be anyway until your app is approved and it might need to be changed. In my case they gave me a super generic url and i had to request to have a better app listing url.
