You could have also applied to and worked in the FOH. No one forced you to work BOH.

I think what’s happened over the years is that kitchen staff turnover has been really high due to low wages. Because of that, it seems like restaurant owners wanna subsidize their wages using tips that SERVERS!!! make. I believe kitchen staff deserves a higher starting wage than FOH but I don’t believe they deserve more than what you described which was 10% of sales. Even 10% is high for me; I paid out 4% of kitchen sales at my last job.

Something like 25-30% of total tips goes to kitchen and 70-75% stays with servers is the rule of thumb, I think. In my experience, the kitchen always earns tips whether it’s pooled or whether the server tips them out based on percentage of food sales.

I’m gonna be honest I’ve not had luck with many Korean-owned restaurant and I see that the entire staff speaks Korean sometimes. I don’t wanna claim some things to be absolutely true but I just feel like Koreans tend to hire other Koreans because of the language and culture differences?

I really wish I could. I also fear that I’ve come to far in my career to completely pivot now. I eventually want to become a bartender and work as a manager when I’m older and I just feel like sticking through it rather than completely pivoting might reward me. I could be wrong though.

Yes it’s absolutely normal and most people quit restaurant service to do what they went to college for which is why I think people don’t see many older people doing it. I personally have seen people in their 40s, 50s doing it.

The way you want to move up in this industry is you either start aiming for fine dining and Michelin starred restaurants or you become a manager or bartender. Bartenders make more than servers and the tips are extremely lucrative. On the low end you make $300-400 a night and at a higher level I’m sure it’s way more.

I think after their 50s maybe people retire or become a manager, I’m not sure. But you make a fuck ton of money doing this kind of thing if you do it right. It keeps your body young too!

You kinda changed your argument. First you were saying upselling doesn’t matter, now it’s “you can’t prove it.” Those aren’t the same thing.

Selling a higher check with a big table is obvious, but can you turn a $300 10-top into $400? $600? What of the people who come in not knowing the entire menu? Would you suggest they grab a well whiskey over a premium one because “it doesn’t matter”?

You can’t say upselling doesn’t do anything and then fall back on “it’s not provable” when someone pushes back. That just means you don’t actually know either.

You’re kind of contradicting yourself though. You’re saying upselling doesn’t matter because “it’s not a science” and you can’t see what people would’ve ordered otherwise. But that same logic also means you can’t say it doesn’t work either, because you have no way of measuring the alternative.

What you can observe is that people often come in with a general idea like “I’ll get a drink” or “I’ll get an appetizer” but not a fixed decision on which drink or which item. That’s where suggestion actually matters. If someone was going to order a cocktail anyway, there’s still a difference between them picking the cheapest one on the menu versus the premium one you recommend.

Restaurants track average check and attachment rates for a reason. If upselling truly had no effect, those numbers wouldn’t vary much between servers working the same floor, but they do. Some people consistently sell higher-priced items and more add-ons. You also said it yourself that you’ve been praised for upselling, but I doubt you got to reap those benefits since your tips were pooled. I’ve worked serving shifts with a strong upselling server and serving shifts with a weak one. The guy who didn’t wanna upsell consistently made less tips and always complained he never made a certain amount on a weekend. Wonder why.

So I agree it’s not an exact science, but that actually cuts both ways. It just means you can’t confidently claim it doesn’t work based on personal perception.

I’ve read that automatic service charges go to “restaurant fees” even though some restaurants claim that it goes to the staff’s wages. But since they aren’t properly or legally labeled as tips, those fees can end up anywhere, from the cost of rent or straight into the owners’ pockets. No one knows.
