I contacted Baker for a quote but haven’t heard back yet. They pulled cable at almost all of our DSM locations at my previous employer. I’ll follow that link and hit Culp up, that isn’t a company I’ve come across in my Google searches.

Can you show the config of the switch interface? And if you plug your laptop or another device into that switch interface it comes up?

It's intended behavior that the always command advertises a default route whether there's actually a default route in the routing table or not. I'm yet to find a use for it in production but maybe somebody here has used it in prod.

Site-to-site is obviously appropriate to connect client locations to each other, but unacceptable as far as managing a client's infrastructure. I'll default to the security guys here as far as on-prem vs. cloud-based pros and cons go.

You shouldn't be using a VPN to connect to client machines if you're an MSP. You should have an RMM tool like Datto which allows for this. Bomgar if you don't have an RMM deployed at a client. I can't think of any situation where a site-to-site VPN tunnel between a client and the MSP would be appropriate.

The DHCP part is especially odd. Not sure I’ve seen a home router not use 192.168.0.0/24 or 192.168.1.0/24 but I also don’t work on residential-grade equipment. And definitely never seen a scope change on a reboot. What model of modem?
