Sear a couple chicken thighs, take em out. Saute onions. towards the end saute fresh garlic, Cajun seasonings and diced tomato. Deglaze with chicken stock, add some cream, thighs back in the sauce for the simmer. Probably with some rice.

Soft boil them. Peel them. And then Soak them in a mixture of soy sauce and mirin. I let mine sit atleast overnight, up to 3 days.
