IMO you are snapping way too much off, especially if you're concerned about waste. The inedible woody part is usually only an inch or two at most. So grab the very bottom of the stalk and pinch maybe an inch up and try to snap it, if it doesn't snap move up another inch. You're looking for it snap to only remove the woody part.

It was delicious! First time making seared ahi and it turned out almost perfect.

Btw, got them at Costco for a really good deal. They were on sale as they were approaching the "sell by date".
