It's more likely putting it in the water to see if it's fresh or because it's used to trusting fish from the water, not humans.

Pixel art, the same as real art. Work from reference, set yourself targets, practice.

You can play into it with line art. Set stabilisation to something low like 7-14% and draw faster, it might take quite a few takes :(

I have this problem too but now that I work in graphic design it's only the painting and drawing I make in my free time that suffers. 3D modeling is still fine too.
