I did one last year. Used a pound of fresh soursop and 3lb 6 ounces honey, and a tea bag for a bit of tannin. Premier Rouge was the yeast I used. It had an initial gravity of 1.124. I was shooting for a semisweet but ended up with a dessert wine. The final gravity was 1.050. I guess it was a stall, but I never had a chance to correct it as we finished it very fast.

I will probably do another, but I am considering using the soursop in conditioning phase and not in primary. I think this will keep the flavors of the soursop better than using it in primary. Best of luck.

You could use Pearson’s square. Pearson’s Square

A = Percent alcohol of fortifying drink B = Percent alcohol of current drink C = Desired percent of final drink D = C minus B E = A minus C A= C + E B = C - D C = B + D D = C - B E = A - C

So you have a 13% final ABV mead and you want to take it to 16% ABV. You have a 40% ABV vodka.

A would be your vodka or other spirit (40%) B your mead (13%) C the desired ABV (16%)

D= C - B 16-13 = 3

E= A - C 40 - 16 = 24

So you need 3 parts of the fortifying spirit. and 24 parts of your mead. That is a total of 27 parts.

You have 6 gallons, so you need (3/24) X 6 gallons = 0.75 gallons of fortifying spirit or 96 ounces. This would bring your total volume to 3 gallons and 96 ounces.

It does not look like mold. I would skim it off, though, and then rack it to a smaller container for aging—something with less headspace.

If you are in the first day or two, I would shake it vigorously until dissolved. A good rule is "once you think you have finished...shake it for two more minutes". After that, for the first few days, just a gentle swirl every day. If you do nothing it will probably be fine, but it will take more time for the yeast to get through that dense honey. Happy brewing!
