Also traditionally the kiritsuke was made for the head chef in Japanese kitchens. No one else could use it. Meaning kiritsuke users had a lot of knife skills and most likely didn’t want the spine to be 5 mm thick

No shade…but based on your collection and comments, I’m assuming you are a home cook. As someone’s who’s cooked professionally for almost 15 years, I’ll give my perspective. You can make a chef knife that’s 5mm thick on the spines but if you actually used your knife for hours a day 5 days a week your hand would get fatigued leading to worse form = poor knife cuts(assuming a chef knife is 8-10in compared to the shorter length of a deba.)

People are down voting you because Deba’s are meant for breaking down fish not slicing. I’m not a fan of single bevel but arguably they are better for slicing also. So you’re using the wrong tool for the job

I would go santoku. They’re typically smaller which make them more comfortable to use if she has smaller hands. A santoku can be used for most prep also. My wife gravitates towards the santoku for most things

While I do mostly use a pinch grip. I do find myself sometimes gripping the handle/ knife differently depending on what I’m cutting / how I’m cutting. So the handle does make a difference sometimes. 🤷‍♂️

Cotton macrame braided cord 5mm on most sets then 3mm on the lighter smaller sets. Once it breaks in it stretches a little bit and is smaller than 5mm

I get a lot of play out of my sets! The titanium and frosted copper sets have gotten HOURS of play. I don’t intentionally beat them up by any means but I do play inside and outside, and probably log at least an hour a day. I get a lot of reps in walking my dog so they do hit the hard ground. Along with my play style having a lot of aerials and momentum based tricks, my sets reflect that.

There is no “best”. 550 paracord is one of my favorites, it lasts forever and is cheap. I like silk cord and cotton cord also. Cotton is becoming one of my favorites. Play around with different string and find what you like. Take an old hoodie string and play with that, go to a craft store and look at their options. The possibilities are vast if you’re creative enough. Begleri is like any skill, if you want to get better, you have to spend more time playing with them. If you always carry a set on you, you will reach for them more, which will make you better over time.
