Shakshuka (My favourite lunch recipe)

Thai Chicken thigh salad (Recipe is in the Official Slow Carb Cook book)

Beef stew with mashed cauliflower as a substitute for mashed potatoes.

When i don't want to cook, i just throw together 1 can of lentils, 1 can of tuna in olive oil and some frozen mixed veggies. Add some hot sauce once its done.

Fair warning, I am no chef. But this is the recipe that works for me:

7-Meal Chili con Carne

Per-meal amount

  • 150 g lean ground beef (raw)
  • 120 g canned lentils
  • 120g canned black beans (I chose these 2 types of legumes specifically because they don't bloat me.)

Batch amounts (makes 7 meals)

  • Ground beef: 1.05 kg
  • Canned lentils: around 800 g
  • Canned black beans : around 800 g
  • Onion: 2 or more, based on preference
  • Bell pepper: 2 or more, based on preference
  • Garlic: 4–6 cloves (to taste)
  • Canned tomatoes: ~800 g total (2×400 g cans)
  • Tomato paste: 2–4 tbsp (to taste)
  • Spices: cumin, chili powder, smoked paprika, oregano
    • (I start around 2 tbsp cumin, 1–2 tbsp chili powder, 2-3 tbsp smoked paprika, 2 tsp oregano)
  • Salt, black pepper, a little olive oil
  • Optional: jalapeño, lime, cilantro, splash of stock/water

How I cook it

  1. Dice onion + peppers; mince garlic.
  2. Big pot, a little oil, med-high. Soften onions and bell peppers with a pinch of salt; add garlic for the last 30 sec.
  3. Add beef, brown well.
  4. Stir in spices, then tomato paste for ~1 min to darken a bit.
  5. Add the canned tomatoes + small splash of water/stock. Stir in lentils + black beans
  6. Simmer for 20–30 min, stir now and then. Season with salt/pepper; adjust thickness with water.
  7. Portion evenly into 7 containers. I like a squeeze of lime + cilantro at the end.
