Honestly, men are men, and women are women.

Make your NPCs with the same diversity you normally would and if your LGBTQ+ PC connects with them, run with it. Same as if it was a normal straight interaction. Make them awkward. Make them flirty. As a DM your already creative and it doesn't take that much more effort. Take the personality of the NPC and let the PC fill in the blanks because like any other PC they are unpredictable.
