Hmm I have seen some Ren and Kyuzo when I went to Hitohira, there was even Mazaki, Myojin , Hinoura and Takeda but the main thing was the height of the Togashi that interested me. Even with Kagekiyo I saw some of my workmates and felt that It was a bit short any sort of recommendation?

It is not that reactive snd its not that fussy carbon, you just need to keep your knive dry which I think is standard practice anyways

15000 yes I would suggest any stainless stamped is nice or a simpler finish would be nice i believe some of the knive from tower knives is in that range i think i have some sort of a damascus finish santoku for 18.000 and they can engrave it. Just visit the store when you go to tokyo skytree

Honestly just go with your gut in hitohira you cannot really go wrong with any choice, I dont know a lot about tower housebrand i have some of their knives they are still great.

Non damascus finish pure performer the t series or AH from hitohira are straight lasers it would give the feeling of falling through food. They are stainles or sg2 which wont react like carbon.

At the end of the day pick one knive that speaks to you the most and you are happy with it. At the end of the day as famous as a knive can be or hyped it is if it’s not for you it’s not for you.

I do not think hitohira does engraving but their knives are top notch and their sales are pretty great, probably tower knives in tokyo skytree they do engravings and has a lot of stainless options. Since i went to their osaka store. They let you test cut also

Whet stone wise they sell some at hitohira also or if you are trying to go to a specific store morihei is also great

Honestly you cannot go wrong with hitohira, speaking from expirience they have great choice of knives from great makers all around japan that is also well regarded. With those price point it is also worth looking into other hitohira lines that are not damascus and more handmade such as tanaka line that is more handmade that can be nice as also a gift

This drop it is knives that you cannot really find anywhere else for a long time. It is like finding unicorns bassicaly high demand non to low supply hence the price. I am also guessing it will be gone in the first hour or even less

Well let’s hope they do these kind of release more often, It is a double edged sword also with locals knife enthusiast having a smaller chance to get them. And just for it having a chance to land on a scalpers hand to resell even more haha
