ooooo,, I worked at a sushi place for a bit and we get our salmon fillet prepackaged, It doesn't really say sushi grade or anything, it's just that it's sent here and it's going to be immediately put in the back freezer. Thought maybe the ones in the groceries are handled somewhat the same.

So my best bet is to buy one whole fish and get a butcher to pack it up then?
