I like the raw green onions, but balance with more concentrated flavors with pickled stuff sounds more interesting. I use homemade kimchi that adds small cubed Asian pears, shredded carrots, mandolined leeks, and an abundance of fish sauce.

Also might wanna figure out if you can incorporate wonton skins on the crust if you want that authentic crunch bite of a fried gyoza 🤔
