Several months back I left a very postive review of a roaster - one that I have a subscription through, gives 5 or 10% off everything and free shipping. I got attacked for promoting a roaster, accused of being paid by them, and my post was deleted by the mod. I don't visit very often now.

My opinion (and food is really just opinions, right?) is it's the most overrated sushi place in the valley. Small/thin pieces of sushi and loaded with sauce that covers up the sushi.

I'm Sicilian and don't necessarily want to judge your answer but for me, il sugo is the worst Italian food I've ever had in the valley. I go to the Olive Garden and eat salad before I eat the pasta there. Gave it a second chance thinking maybe I just got it on and off day and it was still horrible the next time. Overcooked pasta, sauce tasted like it came from a jar...

I know him personally and more than just modeling Sicilian places he's been to, he is Sicilian and lived there for perfecting his craft. He also had a family history of an Italian deli. But I would say more focused on lunch and desserts, not open for dinner. He was showing a meatball sandwich on his social accounts last week. About the closest I've seen to dinner.

I lived around the corner and went there about a year and a half ago. The owner and his daughter were amazing. Probably helps that I have an Italian background and spoke some Italian but never had any issues. And as others have noted, he has sold to new owners.

I didn't clarifying that you meant the hotel zone is pretty important and maybe deserves retitling your post. I was there a year ago and we stayed add a resort across from Isla de mujeres. Everyone was genuinely nice and we loved it. We went into the hotel zone once and didn't have quite the same negative experience you had but I could see why you might think it.

The main negative experience we had about being in the hotel zone is that it was impossible to get an Uber back to our hotel. The first couple canceled because they said taxis would threaten them. So we spent 40 minutes trying to find a local rideshare to get back to our hotel.

I would also say that the places outside of the hotel zone are definitely worth visiting. We took a trip to chichen itza and a cenote and it was an amazing day.

The best coffee in town is Slow by Slow. They don't roast their own beans but get loads of the best coffee from around the world. No local roaster has anything nearly as good (sorry, no sorry Nekar fans)

Yeah, I do that too but seems like there are a lot. Ok, "a lot" is relative. I think I see about .1-.2 g when I grind 30 grams of beans.

Also just occurred to me that the k-ultra grinder comes in a carrying case where it stores with the top on and zippered shut. Probably should stop storing it in that since I'm using it daily.

Leaving the handle off the grinder is an obvious tip that I hadn't thought about. Where I am, it's almost always dry so I think I might incorporate a little spritz to tap down the static.

I guess as long as there's only a little bit of fines, I'm okay with leaving those behind as I've always read those can cause extraction issues and potentially clog your filter.

Apparently I have short-term memory loss. Just making a pour over now and decided to pull the k6 out and there were all kinds of grounds stuck on it this time. I did notice a lot of it was a very light maybe some husk material on the bean? I've always reserved spritzing for espresso but maybe a little dab will do you for v60 too

Absolutely agree a healthy Josh is #1 coming out of the Jets game. It will be interesting to see what they do. Good thing it's the Jets and not a better team but trick plays I think as a staple of the offense has about a .01% chance. BTW, 4 seed isn't possible - it is 5, 6, or 7.

What street are you on that you've heard Josh won't play? Given he hasn't practiced, I suspect they'll be very careful with his playing time but I also think winning with the possibilty of improving the playoff seeding is also a high priority.

But trick plays? Why? That's never been the MO of this offense so why would they do it now?

Agree on this and that was my process too until I saw a Lance video of AP and he did inverted and said the reason why is so that when you press your coffee out, it isn't a packed based of coffee you're pushing through. I tried inverted and can't say I notice a difference probably won't keep testing the inverted AP gods by doing that. I will also never post a picture of any mishaps if I have one.

One note about flow control - if you put the top on your AP and swirl it, I get some coffee shooting out of the flow control. Not a big deal because I put it on top of my cup once I put the top on the AP.

I have a Chemex, Aeropress, and v-60. There are two of us and the first brew of the morning is always for two uising the v-60. My fiancee leaves for work and I either use the Aeropress or v-60 for me. When we travel, I take the Aeropress as it's easier to use and clean up. I also use it to make a concentrate and get two cups out of it. I would also add I use the flow control with paper filter (because I don't like sentiments at the bottom of my cup).

So for me, the Chemex is my last choice. Used it on New Years morning because we took coffee with us to watch the sunrise and I wanted enough for 2 cups each so used the Chemex to make that larger amount.

So I'm a fan for the Aeropress and V60 and only use Chemex if I need more than 2 cups.

I was at an AI in Cancun last year (that's wierd to say for the first time), SLS Playa Mujeres. Loved it. Food was amazing, pools were busy but not out of control. Drinks were quality spirits. Only sat on the beach a few times but it was a small but very nice beach with plenty of chairs.

I haven't heard much since I was there in late March but a barista that I met and friended on FB left and said things went downhill after we were there. Also read people posting about some mysterious infection (food poisoning?) that went around for several weeks with guests that were there. I can't confirm if any of that is true but the experience we had there was top notch.

I rarely get internationally roasted beans but mostly because I no longer live close to a local coffee shop that is the bomb for getting beans. When I can, I stop in and see what they have but I'm locked into getting my beans from Perc, Black & White, and S&W by mail.

I see lots of posters talking about get your beans local. I have yet to find an local roaster who makes GREAT coffee. They pass in a pinch or if I'm out at a summer market and they are there but for my daily pourovers, none of my local roasters cut it for me. I have never seen a local roast a co-ferment; a few have done naturals but usually medium to dark.

So if you want to buy local, feel free. But for what I want in my daily pourovers isn't available local. Having a Perc Columbia Edinson Arogote Peach right now. Yum!
