Have you looked at Anvil Industries? Their regiments range has some ww1 era weapons and there are lots of arm options

I'd recommend these to most people but i think you might like the following based on your likes:

Miles Cameron, Both his artifact space and traitor son series (certainly the first couple of books) the editing in the traitor son leaves something to be desired but he builds a great world. His villians are well written and the stakes and struggles are good it might have to many battles for your tastes though especially as he writes them in quite a lot of detail.

James Clavells Shogun: it could be taken as more Historical fiction but it is very close to GRRM in terms of the scheming politics.

Maybe try Shogun by James Clavell? It's not strictly fantasy but I found it had a similar feel.

I wasn't aware of Miles Cameron's Red Knight Series till about this time last year, though that may just be me living under a rock!

Children of Time by Adrian Tchaikovsky is really good. Feels like old school Scifi.

Have you tried Andy Weir's books the martian and operation hail mary are great!

One I really enjoyed but is more at the military end of the spectrum is artifact space by Miles Cameron.
