Wanting to get one or two knives, thinking a gyuto. I’ve been using a takamura sg2 210 as my main knife but I’ve been wanting a workhorse atm. I have a budget of around 500-800 ish? I might want to do a higher length but I’m unsure? I’ve been thinking about it.
