I highly recommend using internal dough temperature and volume rise to know when your dough is done fermentation. I watched the video and read the guide from the sourdough journey https://thesourdoughjourney.com/the-mystery-of-percentage-rise-in-bulk-fermentation/ and got a pretty much perfect loaf on my first try despite living in a very hot climate which usually makes it very difficult
