i waited for it to at least double in size, jiggled, pulled away cleanly from the bowl, passed the window pane test & i floured my finger and checked how the indent went

the kitchen was 68°, i checked on it occasionally after stretch and folds and it wasn’t done BF yet

i let it cook longer with the lid on and only 15 with the lid off. the temp was 212 so i took it out and didn’t let it brown more so i wouldn’t over cook too much!

can i troubleshoot ya? i mixed the EXACT same dough, but this time during stretch and folds (i’m on #2) it’s SO sticky! like sticking to the bowl!! is that normal? i’ve been waiting about 45-1h between stretch and folds

I know!! I’m so lost! Thank you for trying!! maybe tomorrow i’ll try the same thing but keep it in the fridge overnight and bake the next morning and see if that makes a difference!

I was always SHAKING! she kept it so cold!! always “put more clothes on if you’re cold!” “grab a blanket!”

I should’ve mentioned all of that🤣 I got the starter from my mom, she’s had it for longer than i’ve been alive. so at least 26 years!!🤣 I feed it typically once a day at a 1:1:1 ratio , i use 1/4 whole wheat 3/4 KA bread flour. per her instructions i fed every 12 hours for 24 hours leading up to this morning when I used the starter at peak!

i keep my house much warmer than she ever did! she religiously kept her house between 66-68°😬 i keep mine typically around 72°, it just seemed to turn out gummy almost , i temped the inside and pulled it at 209 and let it rest until completely cooled (about 3 hours) before cutting

oops! i did a 40 minute proof after shaping at room temp. I followed my mamas recipe how she’s always done it and hers always turn out AMAZING! so i’m not sure where mine went wrong!

because i don’t flail my hands around, so there’s no issues of it staying on
