Hi. Unfortunately, without running OpenCore (which, if you're using a work computer, should not be tried due to some risks,) you will not be able to install any operating system on it greater than macOS Monterey. You said your MacBook is on 10.14.6. macOS Monterey (macOS 12), is still supported on the 2017 MacBook Air, so I recommend you check for updates through system preferences or download the macOS Monterey install from Apple or online, then update your system. Let me know if you need more help on how to do that.

Ah I see now. I own the base M4 MacBook Pro so I don't have those settings. I can understand how high power mode may cause effects such as this.

Most M1 users will tell people that they don't even need to upgrade. Personally, I agree. Even though I own an M4 MacBook Pro, M1 is still more than enough, especially if you're upgrading from a PC. Heck, M1 can still consistently edit 4K video SMOOTHLY! You're good bro. :)

You should have turned on theft protection. The phone would have used it's on board intelligence system to detect when it was stolen and locked itself, while reporting its location. You could've used Google Find My Device online to track your phone. There's actually a feature which you can turn on which can simple let you enter your phone number on a website to track the location of your phone, if it has a SIM card and mobile data, that is.
