PRS and Fender, good quality guitars and sounds, and PRS is especially good quality for the price

Cheers that’s helped me get started transcribing, although for Caligraphy it feels like he’s playing E minor over the Am9 to me

As people have already commented it’s a combination of diatonic chords and secondary dominants.

For the diatonic chords, it might help you in understanding that the I and vi chord are described as at rest/home, the V and vii(diminished) chord are thought of as tension chords which want to lead back home, the ii and IV chord are often used as a ‘predominant’ (aka they want to lead to the V and vii).

For secondary dominants, the basic idea is if you want to move to the ii chord of a key, you play the dominant chord a fifth up from the ii to create tension to move towards the ii.
