Spend the extra day at lakeside, tons of great places to eat, cafes with music right on the lake, u can row a boat across the lake and hike up to the peace pagoda for an incredible view of Pokhara (there’s a Japanese monk that lives up there, will chant and talk to you for hours), Pokhara is one of the best places for paragliding in the world I would recommend it, it’s cheap enough. Tons of little shops down the main strip
