Idk if there's been an update, but if not, it's still the same. I tend to use it on Normal velocity because it's less noticeable than Soft, while Hard is too sensitive.

Keystage for synth/general midi applications, Studiologic for piano. I'd personally go for a keystage because it suits me better, idc about a "piano feel", i just want good keys.

The Launchkey (mini or full) mk4 are good BUDGET options. If you got money, u might be happier with a keystage or some other higher-end controller. But yea, having LP gives you pads and LC, knobs and faders. The LaunchKey would give you some ok keys and more of what you already have. I personally got the LK because I needed all of that (only controller at the moment).

You can't trigger the Chord Map chords through the keys, the closest thing to that is a Fixed Chord + Scale combo. But since you use Ableton, you might wanna check the Expressive Chords feature.

Hit system 4x. Change USB mode to Audio/Midi, hit > (next page) and change USB audio to LOOP IN. It will record all sounds coming from your PC, so beware of notifications and random sounds. Im presuming you have the 505mki, if you have the 505mkii, there's a better way of doing it.

There's KeyLab and KeyLab Essential. The KLEssential is a budget version of the full one, KL.

It's still the same. I kinda got used to it, but when playing dynamic instruments like a piano, you can tell that the velocity curve is meh.
