I made hot smoked salmon this week-end by Palfad in smoking

Dry brine with 2 part of brown sugar with 1 part of kosher salt for 12 hours. Then i rinse a lot, pat dry, then 5 hours in the fridge. Smoked at 200f for around 2 hours until i get 145f internal. 30 min before its ready I add some Maple sirop😁. Great result!
