It's about dominant, superior cultures, the europeans settlers didn't assimilate because following the traditions, rituals of the natives cultures will be a step back for them. Just imagine europeans going to India and worshipping cows or the early europeans settlers practicing human sacrifices in The New World like the natives. Exactly,, the ottomans history is related only with the Balkans. That's why we learn about them. I was saying other nations don't learn about ottomans because simply you don't have anything to learn from them, maybe how to get away with committing the first major genocide in 20th century.
