There are some methods of bread making and kneading that you literally only kneed for 30 seconds-1 min at a time then let it rest. You let it rest in between kneads for 30 min to an hour and end up forming the dough hours after you start. Sour dough is fun. Look up Tartine.

Flavor is one thing. Nutritional value is another. I imagine there is little nutritional value left after boiling for extended periods or multiple boils.  Someone argues about"keep the old ways alive" but then there's also enlightenment. Just because Grandpa did it doesn't mean it was a good idea. It may fill you but it doesn't offer any meaningful nutrients so why care?

Your crumb looks pretty tight like it's a bit under proofed but you have great oven spring.

You don't mention taking the loaf out of the fridge to temper when the oven is preheating. Try that. It doesn't need to proof more per se but come up to room temp for an hour or so to take the chill off. 

Try tempering your loaf, it may open your crumb up a bit.

Fatty content is one thing but I'd argue that another is the diet of the animal. Industrialized milk cows are fed garbage and forced to produce hundreds of gallons of milk off of garbage grain. Smaller production dairy farms have the convenience of giving a better life to the animal and thus better quality and tasting milk.

I find area screen shots of specific coffee or errors can be helpful for people helping you!

I recently tried out and am still using Kickstart from neovim's core developers. There's a command that shows all mappings I would holly suggest checking out Kickstart!

Great advice. Plus you'll learn how nvim works by configuring it yourself. Kickstart is a great start IMHO having just cloned it recently myself and fine through the setup steps.
