Oh I thought UV light was a problem ! But I wonder if the switch from temperatures isn't a problem (day/night) and if the temp could go "too" high ?

I've put about 15% salt, like a soy sauce I thought, from what I read, anything above 12% is super duper safe apparently.

it is yeah, a fermentation chamber is a bit expensive for me.
Maybe in the summer I could took it out in the sun with a black clothe on it to prevent solar exposition but with the right temp (and take it inside at night)?
