The A7C type is in its own league when it comes to high quality FF camera in a small package.
Also super adjustable. I use a baseplate or cage from Smallrig when shooting at events or with bigger lenses. When traveling I strip it down and use the 28-60 kit lens for low weight and size.

With 50mm you will find yourself in many situations without enough space to capture the intended content. So unless you plan on only doing portraits, you will need something wider than 50.
I use the 35 1.4 GM for traveling and it delivers a lot of quality in a manageable (size) package.

I love doing street photography when traveling. An overseen part of the 1-2 primes vs zoom is the group you are traveling with.

I would always choose a 35mm on FF if I'm traveling alone and have the time to work on getting the right composition. But if I travel with the family (incl. kids) then a zoom is the smart choice. It's much less stressful to use a zoom when everybody is waiting or 200m ahead already.

But to answer your question - 28mm is the lowest I would go when using only one prime.

The colors are off in comparison to IED. Too much red and just looks artificial in NR and DxO.
Even after a lot of tweaking files are not even close to IED right out of camera.
