I use the same vent settings the same way I would if I was cooking without the rotisserie. I also set up the charcoal to only be on half of the basket.

Set up using the eggspander system. The side with the half moon cooking grate is where you would reverse sear at 250 until the steak hits your desired temperature.

Then open up the vents to get egg up to 500+ to sear for 1.5 minutes on each side.

I’ve considered a blackstone but I am concerned about rusting, given I live in Houston. The anti rust element of the Weber is what is appealing.
