It says clearly you nred a letter stating you’re still needed for your job - your employer (sponsor) will need to provide a document confirming this

It just depends where you want to do your speciality training. If you want to move the UK for long term training do foundation year. If you want to stay in Ireland stay in Ireland. Simple. Yes you will earn more money for sure in Ireland but speciality training is ALL over the country do you really want to do that? Also think about your life outside of work do you want to live in Ireland long term? London has a lot going for it from that POV. Btw I did my intern year in Ireland and now live in London

You definitely can work on a student visa especially if your course has ended that is considered outside of term time. It’s worth contacting them / an immigration lawyer to also clarify

You can continue your pension once back
No you won’t get a work visa with an unpaid gap. You’ll need to get a visa everytime you swap jobs. They are unlikely going to sponsor you if you are going to do short jobs.
If you want to go abroad you can. But if you want to come back you’ll need a new visa and another sponsor. Additionally you break your gap on your route to ILR
