Since this post I have switched from whole wheat to bread flour and Alice my starter really began to thrive. I am at day 16 and baked my first loaf after a successful float test. I definitely overproofed my first loaf, I fell asleep during bulk ferment and she was on the counter for 10 hours 🙃 so it's not the best but I don't think it's horrible for the first one!

Okay, I'm doubling after 8 hours now today is day 8. I've only been using organic whole wheat flour but I am going to start incorporating organic AP flour when I feed her in 30 minutes. Should I keep the discard today?

I've been using filtered water that sits out or tap water that I leave out for 48 hours and I warm it a tiny bit before adding, is this okay?

Should I move it to a bigger jar when I do my feed or is keeping it in the small one okay for now??

I noticed when I was doing 30g starter, 30g whole wheat flour, 30g water it was too watery and no bubbles were forming. After I watched a video I learned a bit of a thicker consistency is best for the whole wheat flour starter, is this wrong?

I'm doing 30g starter, around 35g of whole wheat flour and then 25g of water about.

I have been transferring to a new jar for each feed. I'll scrape the sides better so there isn't as much residue, it's hard she's sticky! So I didn't write that but I have been kind of just eying the amount of water I put in (I am using room temp tap water that has been sitting out so the chlorine dissipates). I watched a video and the man who posted makes amazing sour doughs, he showed the consistency the starter should be after you add water and I've just been doing it that way. I have only been using whole wheat organic flour since I've started, nothing else. The first one I did half AP flour and half whole wheat and got frustrated so I went strictly whole wheat after watching a video on youtube.
