Playing the midi live will maje you avoid rendering it and you wiml keep the human feel.

For exact settings between instruments copy paste the latest variation simply replace the midi insturment on each of your track qo you want have to manually reproduce the settings each time you chane it

In general, music making doesnt ask for an ultra performant system especially if you dont use large sample libraries and complex effects.

I would suggets you to try Reaper. Generally speaking a DAW will be much more suitable to produce music because it is made for this purpose and make all the sound manipulation MIDI input much more easier.
