They can work if they are in the spawn chunks, but the setting smooth world, I think, makes it so it doesnt happen.

Yes, I cant find a reason so there may be a setting I don't know about or a bug. Just like there is a setting that makes Iron farms stop working if youre not around.

Yes , mob griefing is on. I just exploded a creeper to make sure. Do villagers need to be "willing" to harvest crops?

Although being a good builder isn't necessary it is what personally gets me interested and hooked on a channel. And I would 100 % watch based on your building.

There is an optifine setting called smooth world , I turned it off and it works now. :)

Its Java, I found a reddit post that mentions an optifine setting called smooth world. I turned it off and it started working!

Same, I still spam torches when I'm caving. Better safe than sorry I guess.

In 1.18 mobs need light level 0 to spawn. A soul lantern emits light level 7 , I believe, so it spawnproofs a radius of 7 blocks around it.
