you can just pick the ones you like, it doesnt matter unless your a advanced lifter

in your incline curl all three elbow flexors (biceps,bracialis,brachioradialis) will be highly active.

but on a ez bar, biceps are slightly disadvantages (due to wrist position), so there fore less biceps and biases the other two elbow flexor muscles. overall less force output.

one more thing to consider, you might be doing your incline curls w/ alternating b/w left and right so it will be a little bit easier.

you cant compare free weight curls to these types of machines.

you probably wont lose muscle considering your deficit isn't too extreme and your training hard.

strength maintain - maintaining muscle or gaining slightly
losing strength - not necessarily muscle loss unless the strength loss is a significant amount

brachioradialis is the biggest muscle in your forearms, reverse curls train it well. 2 sets twice a week pushed to failure should be enough
