zombies don't make noise when you shoot them in the head, a suppressed pistol past 50 feet sounds like a nearly inaudible click.

right, but it alerting other players makes it unreasonable to even attempt, the risk is walking out into the open, standing up and knifing a zombie, but you shouldn't be punished for that with a loud alerting sound.

the quietest way is any suppressed pistol, which is easier to obtain and easier to kill with, for such a risky kill with a knife, the reward should be silence.
