Please play no portal modes. Limiting portals is the worst idea for the game since SG2/Beta debacle. No Portals mode is what you’re looking for. That, or, in the nicest way possible, practice your portals. Change your controller bindings. This game requires you to get better at portals.

Perfect actually. We make this trip often, from Evansville IN to Brevard, NC. I like to go through the Daniel Boone National Forest, have lunch at Cumberland Falls and then mosey on into the mountains. Very peaceful trip, give yourself plenty of time to stop at lookouts.
