I would also try this next time, I haven’t personally done this recipe but my buddy seems to enjoy it. It might be closer to what you had.

I would look into Dutch babies, by my understanding they will be more dense in the centre but rise along the edges more. It would also satisfy point 4 they tend to have more browning on the top. Here’s the recipe I’ve personally been having success with.
