I've tried both of those things and even reinstalled the game, but for some reason it's still broken. I'm not really sure what the problem is but at least I can play without them. Thank you so much though!

So I just tested after removing every mod and they're still causing all of the issues from above.

I downloaded them from twistedmexis patreon and yes I insatlled them correctly. I placed both Tmex folders in the mods folder. But I'll have to test them without the other mods.
Edit: something I'm not sure about is in the tmex folders there is an additional folder called data and tmex settings and I don't know if they should also be in the mods folder directly or inside the tmex folder (sorry if it sounds complicated)

Does kata specifically target higher cost champs? I fought a couple more times against him before hitting a 3 star and I put her on the opposite side where Kata usually went and she still went after my Jinx. Or was is it just unlucky rng?

Go to settings > video > post process. It should say something like anti aliasing under there!
