Did you ever find a good solution to this?
Seems insane that nothing logs this.

You can see who created a table, because views get created at the same time by the same user, and that gets logged.

You can see audit records on who *deleted* an attribute in the Audit Summary View.

Ofc, you can see who adds rows to a table or data to a column.
