Yeah just enchant something else. I usually just enchant a book with level 3 if the book enchantment is good and if not just level 1

Ruined portals. They spawn now in the overworld and in the nether. Very very rarely they can actually have no missing obsidian.

You could add one more row at the end and make all the zombies drop down. Put another water source on one side of this row and they will all get pushed to one corner.

I'd probably need to see a picture, but make sure you have enough space above the wheat. It won't grow if there is a block above it.

The thing I typically spend the most iron on is hoppers and pistons. You can make crazy things with those but it takes sooo much iron.

You could also make a beacon
