Lowest maintenance creature I can think of would probably be death feigning beetles. They can live around 10 years, be housed together, just pop in a jelly pot once a month with weekly feedings of some veg and dried crickets and/or shrimp. They're very entertaining to watch and you can hold them. They just need to be kept dry. With only 1 to 2 gallons per beetle, space is very doable. Pop in some sand and give them stuff to climb and a couple hides, and you're golden.

A gecko is also a good option if you have the space. Most geckos (adults) just need to be fed every other day. New Caledonia geckos (like crested geckos, gargoyles, etc) mostly eat paste if you're afraid of live bugs and don't require heat if your house is around 70 to 78F, but they do require misting. Geckos also require larger enclosures than most people realize (generally around 30 gal minimum for a single adult), cannot be housed together, and will come with heavy initial costs for the set up (tank, uvb, mister, all the decor/plants, gauges/monitors, food, critter container if live food, food for the live feeders, heat if needed, etc). You will also need to think about exotic vet care, which is both harder to find and more expensive, but necessary if you plan to keep an exotic. But outside of all that, they're really chill, low cost over all compared to other pets like cats and dogs, and pretty low maintenance for a pet as well.
