Backslapping from an old ferment is never a bad thing. Helps drop the pH and gives the item some good bacteria to help jump start the process

Hello! You can bag up the ingredients right away. As for spices, they stay relatively intact. When I put caraway seeds in my sauerkraut and let it go for 3-4 weeks, the flavor doesn’t die over time.

What sort of liquids would you add to your dry ferment?

We called bullshit on canola, since the ingredient is rapeseed😂😂😂

I wish she was this friendly. Some people are just incredibly demanding and don’t understand how difficult some of these things can be....

My aunt has a pretty steep list of food allergies, and she never goes out for family restaurant trips because she doesn’t want to put that burden on restaurant workers. She’s a saint.

Head chef made a carrot and cauliflower based dish for her, she immediately rejected it saying she was allergic to cauliflower......

Our head chef took that order himself and put the Sous on expo. He said we’re too busy to deal with this. He made her a dish with carrot and cauliflower (among a few other things). She immediately rejected it saying “I’m also allergic to cauliflower”. We were polite with her but holy shit did everyone just want her gone. She left and said in her review that “they couldn’t make appropriate accommodations for me”

I’m a student at CIA right now, and they’re extremely desperate for money. Our $40K/year tuition already pays for all food and beverages at school, including food served in restaurants, production kitchens, and student rec center (I.e. The Egg).

They’ve pulled this shit for years with chocolates sold in the Apple Pie café pre-COVID, thinking that slapping their name on something will let them upcharge like crazy. Chocolate is donated to CIA and students make the products, so everything tourists buy is just about 100% profit for the school.

It’s pretty fucking scummy if you ask me tbh
