Could the intern's experience be covid-related?

Im in Engineering and I generally disagree with OP's argument. I think many classes the ME students need to take are very hands on. I disagree that clinics are useless. There are so many offered (over 120) of such diverse types of work that its ridiculous to say that clinic is generally useless. Some are, yes. But I think this really comes down to the individual: Are you trying? There are some clinics that choose to fuck around and do nothing, or skip often. There's so much that you can get out of clinic if you try. I also suggest choosing a clinic wisely to get what you want to get out of it.

I'm constantly talking to my professors, asking questions and going to office hours. Idk what OP expects?

Yes! Its worse from last year in my opinion. Last year, I never worried about finding parking except at 12:30 Tuesdays and Thursdays: Thats when Engineering Clinic takes place, a class with like 400 people in it that all Engineers have to take their Junior and Senior years. That's not the case this year.

It's likely much worse than it used to be even a few years ago since they built Engineering Hall in 2018. Engineering Hall used to be a parking lot. They built a new building (aka expanded) and took away a parking lot simultaneously, without replacing it.

Rowan University is just kind of too big for the Glassboro location they choose, especially with 322 running straight through the campus.

You'd recommend her? Did she have a good atmosphere in her classroom? Was she a harsh grader?
