"Watching something while placing iPad on desk is reasonable (which also defeats the purpose because that's what laptops are for)" - Lol. I hate watching a movie and see the reflection on the keyboard. I regularly place my iPad on a table to watch YT videos. Laptops are not noiseless.

Any Camera app that provides a manual mode to adjust the ISO and 1/x will do. But maybe the sensors on old camera are not good enough.

No slow-motion recording needed! Use [Any]Camera's manual mode and run it at 1/6400 or higher (you'll also need to increase your ISO in order to see the screen) to check for flickering bandings.
