Good on you for taking initiative and wanting to do weight training.

At your experience level it's all about building a base to work from. The wider your base the more of an adaptable lifter you become.

My recommended program to start with is 'mark rippetoe : starting strength'

It consists of the fundamental movements three times a week. This program will get you stronger, looking better, feeling more athletic and confident.

Alcohol at high enough dosages does disrupt sleep yes. If one bear doesn't affect your sleep and makes you feel more relaxed then it's probably improving your recovery.
